Andy Ayers and Bill Cardwell endorse new White House approach to food

Dear President and Mrs. Obama,
We, the undersigned chefs and food professionals of Chefs Collaborative, thank you for beginning the critical work of steering our country onto a more sustainable course. We have read with great pleasure and pride that you are giving much-needed attention to sustainable food issues; we write now with a renewed sense of hope that together we can change the way we think about food in this country.
You can read the rest of the open letter from the Chefs Collaborative to President and Mrs. Obama here. As of Feb. 27, about 300 chefs from across the country had signed the letter, including St. Louis’ own Andy Ayers of Riddle’s and the “Eat Here” cooperative and Bill Cardwell of Cardwell’s.





Joe Bonwich has been the restaurant critic for the Post-Dispatch since 2002 and has covered the local food scene for various publications for more than 25 years. He does his best to maintain his anonymity so that he isn't recognized in restaurants (which is why his picture looks like it does).
This is great and I hope it leads to real change. Hopefully the new USDA food pyramid is updated in 2010 to reflect our need to eat sustainable foods that are better for the planet AND for our bodies - mostly grassfed and pastured animals and animal products and veggies.
Making the base of the food pyramid fertilizer/petroleum-dependent grains was such a huge huge mistake and has directly contributed to our obesity epidemic. For 2.5 million years humans evolved not eating any grains, so basing our diet on grains makes absolutely no sense.
According to PETA, you should eat vegeterian, but according to Tree Huggers, you should eat insects.
I want to eat fresh salad, french dressing, BBQ steak & potato & spinach served with Hawaiian bread and country crock spread. Yum! Yum!
For Dessert: I want Chocolate Ice Cream & Hershey’s syrup and reddi whipp!!!! Totally delicious.
There are some foods that are designed to be fattening. Leave them alone. I am not like Jack Lalane. If food tastes bad, I spit it out. I don’t want to live 100 yrs +, if I have to eat sand
“Steering our country into a more sustainable course.” More like inserting itself into portions of our lives where government has no business.
I’ll eat what I want to eat, thank you. And, now that these restaurateurs have revealed their politics (which I find not only abhorrent, but dangerous), I’ll be giving them none of my hard earned money.
