There are so many incredible recipes out there that it’s impossible to pin just a single one down. However, a fun one that I posted on my blog last week for the Memorial Day weekend was Frozen Smores. They aren’t just for children, even adults love them and the best part is that it brings you back to your youth. Plus they are simple to make and delicious. I keep these in the freezer all the time. Make them with calories or cut out a few by using lower fat ingredients. Then you won’t feel so bad having a treat daily!
Fresh fish, veggies and fruit are my favorites all the time but especially when the weather gets warm. My favorite fish is Salmon. Many people are afraid to prepare it. Some easy tips for preparing your basic salmon:
Oven - preheat oven to 500 degrees, rinse the salmon filet and pat dry (can leave skin on since it peels off after cooking); sprinkle with kosher salt; place in oven for 12-15 minutes depending on your oven. That’s it!
If you hate the smell in your home, then wrap in heavy duty foil (shiny side in) and do the same. Ater 15 minutes remove from oven, unwrap and enjoy.
Grill - medium heat for 15 minutes and it’s done. I prefer just salt but season as you like. You can also wrap in foil just as we did above.
I make this early and refrigerate then place on a bed of spinach and doctor it up with whatever you like. Perfect drizzled with some balsamic vinegar. Simple, delcious and healthy!
Serve as an entree with veggies, potato or rice and salad.

There are so many ways to serve it. What ways do you like it best?
I spent the summer in Italy back in 2007 with my daugher and suddenly I have the itch to go back. I loved the Mediterranean food and yesterday had the sudden urge to whip something up from the coast.
I made a Caprese Pasta Salad. It’s light, healthy and delicious. Just select your favorite pasta, I chose Penne for this dish. Then add sliced grape tomatoes and fresh sliced mozzerlla. Then toss with homemade pesto.
This can be served as a side dish or entree. To make it a heartier entree add some grilled chicken or shrimp.
This dish is so wonderful that once you take a bite it’s hard to put down.
If you wanted to use a jar of ready made pesto you can but nothing beats the fresh homemade basil pesto. Give it a try, it’s YUMMY!
