Easy peanut butter fudge needs no cooking
This week, we have a recipe in the newspaper and online for easy peanut butter fudge — but this one, from Joyce Tucker of Belleville, is even easier.
“This was a favorite of my five children (all now grown). No cooking required!” she wrote.
PEANUT BUTTER FUDGE
1/2 cup light corn syrup
3/4 cup peanut butter (regular or reduced fat)
1/3 cup soft butter or margarine
1/2 tsp. salt
1 tsp. vanilla
4 cups sifted powdered sugar
3/4 cup chopped pecans (optional)
Combine syrup, peanut butter, butter, salt and vanilla; beat until blended.
Gradually add sugar, making a very stiff mixture. Turn out on a board,
knead until well blended, working in pecans, if desired. Chill until firm
and cut into 2-inch squares.
