Yield: About 2 1/2 pints

1 (20-ounce) bottle ketchup

1 (12-ounce) can tomato paste

1 1/2 cups water

1/2 cup vinegar

Juice of 1 lemon

1 medium onion, grated

1 cup brown sugar

1 tablespoon dry mustard

1 teaspoon barbecue spice, such as Chef Paul Prudhomme’s Magic Barbecue Seasoning

1/4 teaspoon Liquid Smoke or similar hickory seasoning

1/2 teaspoon garlic salt

1/2 teaspoon salt

1/2 teaspoon oregano

1/4 teaspoon freshly ground black pepper

1 tablespoon Worcestershire sauce

1/4 teaspoon hot sauce

Combine all ingredients in a medium pot, bring to a slow simmer and cook for 2 to 3 hours.

Per tablespoon: 22 calories; no fat; no saturated fat; no cholesterol; no protein; 6g carbohydrate; 5g sugar; no fiber; 115mg sodium; 3mg calcium.
