2 (8-ounce) chicken breasts, with >skin and bones, cut into 2 pieces >each>
2 tablespoons olive oil>
Salt>
Freshly ground pepper>
3 large cloves garlic, crushed>
Juice of 2 lemons (about 1/4 cup)>
3 tablespoons fresh oregano leaves>
Preheat the oven to 475 degrees. Place chicken in a roasting pan, skin-side up. Pour oil over chicken; sprinkle with salt and pepper to taste. Add garlic, lemon juice and oregano to the pan.
Roast for 20 minutes. Remove skin before serving.
