Eleven Eleven Mississippi
Yield: 12 to 16 servings
Nonstick cooking spray or butter, to prepare pan
1/2 cup (1 stick) unsalted butter, at room temperature
1 (18.25-ounce) package yellow cake mix
4 eggs, divided
5 cups powdered sugar, divided
8 ounces cream cheese, at room temperature
1 1/2 teaspoons vanilla
Preheat oven to 350 degrees. Coat a 9-by-13-inch baking pan with cooking spray
or grease lightly with butter.
Combine softened butter and cake mix in a large bowl. Beat on low speed with an
electric mixer until combined, then on medium speed until well blended, about 2
minutes total. Reduce mixer speed to low; add 1 egg; mix thoroughly. Add 1 more
egg; mix thoroughly. Spread, then press the mixture into prepared pan.
Set aside 4 teaspoons powdered sugar to use as a garnish. In a clean bowl with
clean beaters, beat remaining powdered sugar and cream cheese on low speed
until combined, then on medium speed until well blended, about 2 minutes total.
Reduce mixer speed to low; beat in remaining 2 eggs, 1 at a time, mixing
thoroughly after each addition. Beat in vanilla. Pour into pan.
Bake until set and lightly browned, about 30 minutes in a metal pan or 35
minutes in a glass pan, rotating the pan after 15 minutes. Serve warm or let
cool and refrigerate, sprinkling with reserved 4 teaspoons powered sugar before
serving.
Per serving (based on 12 servings): 536 calories; 20g fat (34
percent calories from fat); 11g saturated fat; 111mg cholesterol; 6g protein;
83g carbohydrate; 71g sugar; 0.5g fiber; 374mg sodium; 42mg calcium; 103mg
potassium.
