“The first time I was introduced preserved black limes, I was doing a stage at Roberta's in Brooklyn,” executive chef Sean Turner says. “It’s a pizza place. They were doing a really cool salad where they grated some black lime on top, and I loved it. I use it in my personal cooking, and then found a way to use it at Louie in the eggplant dip.”
