3 cups pitted and chopped fresh >apricots>
1/4 cup honey or low-sugar apricot jam >or more to taste>
2 cups nonfat plain yogurt>
2 cups unsweetened apple juice>
Grated lime zest (colored portion of >peel) for optional garnish>
Puree apricots with honey or jam, yogurt and apple juice in a blender or food processor until smooth. Taste for sweetness; if needed, add more honey or jam. Chill 1 hour or as long as overnight, then serve garnished with lime zest.
