Frazer's Traveling Brown Bag

Yield: 15 servings. 10 cups ( 3/4-inch) bread cubes

1 cup (2 sticks) butter, melted

3 1/2 cups milk

1 1/2 cups granulated sugar

11 whole eggs

4 egg yolks

1 1/2 teaspoons vanilla

10 1/2 ounces dark chocolate

4 1/2 ounces white chocolate

1/4 cup packed brown sugar

Whiskey Sauce (see recipe)

Whipped cream

Preheat oven to 350 degrees. Toss bread cubes with melted butter, place on a sheet pan and toast in oven 15 minutes or until golden. Transfer to a large bowl to cool completely.

Whisk together milk, granulated sugar, whole eggs, yolks and vanilla. Pour over cooled bread cubes; mix well. Refrigerate for 30 minutes.

Shave chocolates into thin pieces; toss with brown sugar. Add chocolate mixture to soaked bread cubes; mix well. Place in a buttered 9-by-13-inch baking pan or casserole that is at least 2 inches deep; cover tightly with foil.

Place in a larger pan with enough hot water to reach about halfway up the sides of the smaller pan. Bake in a 350-degree oven for 1 hour, until custard is just set.

To serve, spoon warm bread pudding into small bowls, drizzle with Whiskey Sauce and top with whipped cream.

WHISKEY SAUCE

Yield: 5 cups.

1 1/2 teaspoons cornstarch

1/4 cup water

1 1/2 cups bourbon

1 1/2 cups granulated sugar

3 cups heavy cream

1 1/2 teaspoons vanilla

Stir together cornstarch and water; set aside. Place bourbon, sugar and cream in a saucepan over medium heat, stirring until sugar is dissolved. When bourbon mixture comes to a simmer, stir in cornstarch mixture in a slow, steady stream. Cook until sauce returns to a simmer; remove from heat and stir in vanilla.

PER (2-TABLESPOON) SERVING: 112 calories; 6.5g fat (52 percent calories from fat); 4g saturated fat; 24mg cholesterol; 0.5g protein; 8g carbohydrate; 8g sugar; no fiber; 7mg sodium; 12mg calcium.
