A • The Italian chopped salad at Charlie Gitto’s delivers a taste of Italy with every bite — the sweetness of Roma tomatoes, the salty goodness of black olives and Genoa salami, the pop of red onion and a peppery hint of fresh basil. Crisp bacon bits, savory Gorgonzola crumbles and sharp pepperoncini add tang while Charlie Gitto’s signature sweet vinaigrette dressing mellows it all.

The 2017 version of Gitto’s chopped salad relies on a combination of darkly green and hearty Romaine lettuce, light green crunchy cabbage and the deep red color and bold flavor of sturdy radicchio for its crunchy texture. The crisp combination adds both beauty and nutritional value to the salad.

“The chopped salad is one of our favorite menu items,” owner Charlie Gitto says. “We plate these salads individually at our restaurants, but it’s a good salad to serve family style for holiday buffets, potlucks and family dinners.”

Families regularly dine at the Gitto’s restaurants. “We sometimes have three generations at the same table — grandparents who came to the Hill location first as children now bring their sons, daughters and grandchildren. We’ve seen our customers return throughout the many stages of life.”

From the earliest days on the Hill, Gitto’s restaurants used simple ingredients in tested preparations that allow fresh flavors to shine. “All of our pastas are made in house,” Gitto says. “We bake our breads and make desserts in house as well, including our popular seasonal gelatos.”

The kitchen at Gitto’s has shared many recipes with readers over the years including a pumpkin seasonal gelato perfect for Thanksgiving, a Penne Borghese recipe and a summery Caprese salad. In 2012, an earlier version of a chopped salad appeared in Let’s Eat. At Charle Gitto’s, the changes in ingredients and preparation to the 2017 version demonstrate how the restaurant continues to grow and respond to customers’ tastes.
