Q • I had Half & Half’s carrot cake pancakes at Easter brunch last year; my friend and I have not stopped talking about them. Any chance you could get the recipe? — Elizabeth T. Schmidt, St. Louis

A • Chef and owner Mike Randolph was glad to share the recipe for this special breakfast treat. The pancakes will work great for spring brunch celebrations, including Mother’s Day, Father’s Day, birthdays, showers of all kinds and graduations.

The secret to the great breakfasts served at Half & Half is that every item is made from scratch in the Half & Half kitchen.

“I love carrot cake,” Randolph says. “We didn’t want this pancake to be too dense; it’s a lighter batter than some. We really like our version of the cream cheese frosting, which includes Italian mascarpone cheese, sweetened and creamy.” Randolph doesn’t stint on quality ingredients at Half & Half, as evidenced by the use of the seeds in a vanilla bean pod for added flavor to the frosting.

The name Half & Half comes from Randolph’s insistence that the quality of the coffee served match the quality of the food. Today, the restaurant uses seasonal coffees from Blueprint Coffee as well as one of their specialty roasts. Half & Half offers another specialty roast from a guest roaster located in the United States. Throughout the year, the guest roasters hold cuppings to earn a place on the restaurant’s coffee menu.

Randolph is as serious about how the coffee is made as he is about the preparation of the food. “I don’t see the point of doing all-scratch cooking if the cappuccino comes out of a machine where you push a button to make it.” His coffees are all handcrafted by his well-trained staff.

When asked which coffee he would pair with the carrot cake pancakes, Randolph didn’t hesitate. “You’d want a cappuccino or a latte with a little steamed milk to match the sweetness of the cakes,” he says.

The savory side of the menu entices as well, with dishes like salmon hash, with two sunny eggs, potatoes, spinach, capers, cream and hollandaise, or fried chicken livers with eggs, red-eye gravy and biscuits. The choices range from small bites to big breakfasts.

“I’ve always been a breakfast guy,” Randolph says, “but when we opened in Clayton there wasn’t a place where you could get a good breakfast and really good coffee in the same place.”

Today, people can enjoy Half & Half, breakfast, lunch and coffee at two locations, the original location in Clayton, and the newest location in Webster Groves.
