Stellar Hog's take on a veggie burger employs quinoa and chickpeas

Q • I love the veggie burger from the Stellar Hog restaurant. I heard they make this themselves, would it be possible to get the recipe? — Jill George, Rock Hill A • What’s a barbecue restaurant to do when the main supplier of its meatless burger stopped shipments with no warning last summer? “We made our own veggie burger that customers really like,” owner Alex Cupp says.

His vegan burger uses an interesting combination of readily available ingredients, none of which is unpronounceable, to make the patties. The nicely seared burgers, served on a toasted bun, come to the table with the perfect topper, a dollop of house-made chow chow, a pickled relish.

Cupp’s extensive knowledge of foods and techniques manifests itself in these burgers.

A mix of chickpeas and quinoa gives the burger texture and heft as well as a healthy dose of plant protein. The fine 1/8-inch dice and subsequent sauté of red onion and mushrooms allows these ingredients to blend into the burger seamlessly, adding flavor and building in some juiciness.

A touch of cinnamon and allspice picks up the flavors, while the chia seeds, ground fine and soaked in water, act as a natural binder. Ground rolled oats add another texture and help bind the mix. Although this was a challenging recipe to test, finding a tasty and different veggie burger recipe was well worth the time.

According to Cupp, customers can add cheese for a vegetarian treat or order the burger with lettuce, tomato and onion if desired. It isn’t a meat substitute, but this plant-based burger delivers a sandwich with no artificial ingredients, minimal fat and great taste.

Sandwiches and burgers at the Stellar Hog come with a choice of sides, some heart healthy and others good for spirit and soul. Try the restaurant’s popular hand-cut crispy fries, pit beans, creamy mac and cheese, and citrus slaw. Cupp also offers seasonal vegetables like this winter’s Brussels sprouts or maple-glazed carrots.

The house veggie burger isn’t the only surprise at this family-owned and family-friendly barbecue spot. The Stellar Hog serves a Sunday brunch from 11 a.m. to 2 p.m. that includes classic Belgian waffles, breakfast hash using smoked meats, frittatas and more.
