In early March, I released the sixth annual edition of my STL 100, celebrating the best of St. Louis restaurants. Not even two weeks later, the coronavirus pandemic forced restaurants everywhere to close their dining rooms. I’ve spent the nine months since charting reopening, closings, pivots and more in an industry facing an existential crisis.
